Enjoy these easy-to-make Stuffed Waffles, filled with creamy Nutella and crispy bacon.

Ingredients
- 1 teaspoon olive oil
- 6 lices unsmoked bacon diced
- 1.9 cups (450ml) milk
- 4.4 ounces (100g) unsalted butter melted
- 3 eggs beaten
- 1 teaspoon vanilla extract
- 10.5 ounces (300g) self-raising flour
- Nutella
Instructions
- Heat olive oil in a pan and fry the bacon till done. Remove the bacon and set aside somewhere warm.
- Whisk together milk, butter and eggs and vanilla and set aside.
- Add flour into a large bowl and make a hole in the middle.
- Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are some lumps.
- Cook the waffles according to your waffles maker instructions until all the waffle batter is finished and set aside somewhere warm.
- Cut each waffle in half, spread some Nutella on one half, top with some bacon and the second half. Repeat till all the waffles are done.
- Then flatten the waffles a bit and return to the waffle maker and cook for a further minute till the Nutella is all melty. Repeat till all the waffles are cooked.
- Serve warm.

Notes
- Keep the cooked waffles warm by storing in the oven for 5-10 minutes at 200 degrees F / 94 degrees C on a wire rack on a baking sheet.
- Lightly oil or spray the waffle iron with cooking spray before cooking each batch.
- Want even crispier waffles? Turn the heat up on the waffle iron. Don’t worry you won’t burn them.
- Do not open the waffle maker halfway through cooking at the risk of breaking the waffles.
- Make sure you don’t overmix the waffle batter. This will make them turn out too dense.
- Store – These can be stored in the fridge for up to 2 days.
