  • 1 teaspoon olive oil
  • 6 lices unsmoked bacon diced
  • 1.9 cups milk 450ml
  • 4.4 ounces butter melted, unsalted
  • 3 egg beaten
  • 1 teaspoon vanilla extract
  • 10.5 ounces self-raising flour 300g
  • Nutella

Instructions

  1. Heat olive oil in a pan and fry the bacon till done. Remove the bacon and set aside somewhere warm.
  2. Whisk together milk, butter and eggs and vanilla and set aside.
  3. Add flour into a large bowl and make a hole in the middle.
  4. Slowly whisk the milk mixture into the flour to make a batter and don't worry if there are some lumps.
  5. Cook the waffles according to your waffles maker instructions until all the waffle batter is finished and set aside somewhere warm.
  6. Cut each waffle in half, spread some Nutella on one half, top with some bacon and the second half. Repeat till all the waffles are done.
  7. Then flatten the waffles a bit and return to the waffle maker and cook for a further minute till the Nutella is all melty. Repeat till all the waffles are cooked.
  8. Serve warm.

Notes

  • Keep cooked waffles warm in a 200°F (94°C) oven on a wire rack for 5-10 minutes to maintain texture.
  • Lightly oil the waffle iron before each batch to prevent sticking and improve crispiness.
  • For crisper waffles, increase waffle iron temperature, but avoid opening it during cooking to prevent breakage.
  • Do not overmix the batter; lumps are fine to avoid dense waffles.
