Oatmeal Breakfast Bars
Description
The recipe combines mashed banana as a natural binder and sweetener with rolled oats, dried cranberries, pumpkin seeds, and flavorings such as vanilla, orange zest, and cinnamon. Maple syrup and coconut oil add moisture and sweetness. Sea salt is used to balance flavors. The mixture is pressed into a lined square pan and baked at a moderate temperature until the bars set and lightly brown, yielding a firm but tender bar with chewiness from the oats and bursts of tartness from craisins.
The bars provide a nutritious option that can be tailored by swapping in different dried fruits or nuts, and are portable for breakfasts or snacks. The texture is influenced by ripe bananas and baking time, offering a soft crumb with some firmness. Cooling before slicing ensures clean cuts without crumbling.
They keep for several days stored in an airtight container at room temperature, making them convenient to prepare in advance. The recipe allows honey as a substitute sweetener for maple syrup depending on preference and availability.
Ingredients
- 3 banana about 10 oz, ripe
- 2 cups rolled oats
- ¾ cups craisins
- ¼ cup pumpkin seeds or almond slivers
- 2 tbsp maple syrup
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1 tsp orange zest about 1/2 small orange
- ½ tsp cinnamon
- sea salt to taste, flaky
Instructions
- Preheat the oven to 320 and line a 6 x 6 inch tin with baking parchment.
- In a large bowl, mash the bananas until smooth before stirring in the rest of the ingredients and a generous pinch of sea salt until everything is combined.
- Spoon the mixture into the prepared tray and smooth the top. Bake for 30 minutes until the bars have set and the top is golden.
- Allow to cool before slicing into 9 breakfast bars.
Notes
- Store bars in an airtight container at room temperature for up to 5 days for best freshness.
- You can substitute the mix-ins with any chopped dried fruit or a variety of nuts and seeds based on preference or availability.
- If needed, honey may be used instead of maple syrup as a sweetener.
