Description
Oatmeal Breakfast Bars combine mashed bananas, creamy peanut butter, and oats for a dense, chewy texture and a slightly nutty taste enriched by almond flour and ground flaxseed. The addition of cinnamon and kosher salt highlights the sweet ingredients like coconut sugar and honey. After the bars bake in an 8x8 pan until set, a mixture of melted dark chocolate chips and peanut butter is spread on top, then chilled until firm, providing a rich, layered finish with optional flaky sea salt.
The bars can be sliced and served chilled, making them convenient for on-the-go breakfasts or snack times. Their combination of natural sweeteners and wholesome ingredients creates a filling option that does not require added syrups or toppings.
They can be refrigerated for up to one week or individually wrapped and frozen for two to three months. The chocolate peanut butter topping is optional and can be replaced with a drizzle or just peanut butter if preferred.
Ingredients
For the bars
- 2 banana overripe, mashed (~1 cup
- 1/4 cup peanut butter creamy
- 1 large egg
- 1/2 cup coconut sugar or organic cane sugar
- 1/3 cup honey
- 2 tsp. vanilla extract
- 1 1/2 cups oats quick cook
- 1 cup almond flour or almond meal
- 2 Tbsp. Flaxseed ground
- 1 tsp. kosher salt
- 1 tsp. ground cinnamon
Chocolate topping
- 1 cup dark chocolate chips
- 1/2 cup peanut butter creamy
- sea salt flaky, optional
Instructions
- Preheat the oven to 350°F
- Line an 8x8 inch pan with parchment paper. Set aside.
- Add the mashed bananas, peanut butter, egg, sugar, honey, and vanilla to a large mixing bowl. Whisk well until combined.
- Add in the oats, almond flour/meal, flaxseed, cinnamon, salt. Stir until combined.
- Pour into prepared pan. Bake for 20-25 minutes or until the middle is set.
- Meanwhile, add the chocolate chips and peanut butter to a microwave safe bowl and microwave in 30 second increments until smooth.
- Pour chocolate mixture over the bars right when they come out of the oven and smooth out into an even layer.
- Refrigerate until set, ~30-60 minutes. Cut into bars and enjoy. (Add flaky sea salt on top, if desired).
Notes
- Store bars refrigerated up to one week for freshness or freeze individually wrapped for 2-3 months.
- The chocolate peanut butter topping is optional; you can instead drizzle chocolate or use peanut butter alone for a lighter finish.
