Oatmeal Chocolate Chip Cookie Pie

The Oatmeal Chocolate Chip Cookie Pie is a baked dessert pie combining a classic cookie dough made with butter, sugars, eggs, vanilla, oats, chocolate chips, and nuts, all spread in a pie crust. It bakes to a set yet moist texture with golden edges and melted chocolate pockets throughout. This dessert offers the familiarity of cookie flavors with the form and serving ease of a pie, making it suitable for sharing.

Description

This recipe layers a buttery batter of creamed unsalted butter and sugars with eggs and vanilla, folded with all-purpose flour and rolled oats for texture. Chocolate chips and chopped walnuts or pecans are mixed through before the batter is spread into a frozen pie shell. The pie is baked at a moderate temperature until lightly browned and set but remains moist inside, indicated by a toothpick that comes out dry of raw batter but still slightly moist from melted chocolate.

The resulting cookie pie has a soft, chewy interior with crunchy nuts and chunks of chocolate, contrasting with a flaky pie crust shell. It can be sliced and served similarly to a traditional pie, providing a different presentation of oatmeal chocolate chip cookies. The moderate bake time and temperature contribute to the even cooking and prevent overbrowning.

Ingredients

Servings
  • 3/4 cup unsalted butter 1 1/2 sticks, at room temperature
  • 1/2 cup sugar
  • 1/2 cup brown sugar packed
  • 2 large egg
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats old fashioned
  • 1 cup chocolate chips
  • 1 cup walnuts or pecans, chopped
  • 1 pie crust 9 inch, frozen

Instructions

  1. Preheat oven to 325F.
  2. Cream together the butter and sugars until fluffy. Scrape down the sides of your bowl as necessary.
  3. Beat in the eggs, one at a time, then the extract.
  4. Fold in the flour and oats.
  5. Fold in the chocolate chips and nuts.
  6. Spread the batter into the pie shell and bake for about 45 -50 minutes until lightly browned and set. A toothpick inserted in the center will come dryish (meaning no uncooked dough clinging to it, but it will be moist and there will be melted chocolate) Better to under cook than to over cook this one.
