Oatmeal Eight Ways

Included here are EIGHT delicious varieties of oatmeal, no more boring plain oatmeal and sugar everyday! These are perfectly comforting and hearty, and they're a great way to start your cold fall and winter days.

Ingredients

Servings

Base recipe

  • 1/2 cup rolled oats old fashioned
  • 1/2 cup milk preferably 2%
  • 1/2 cup water
  • 1 fair pinch salt

Almond Butter Banana Flax

  • 1/2 banana mashed well, well ripened
  • 1 Tbsp flax seeds ground
  • 1 1/2 Tbsp almond butter
  • 1 tsp honey or to taste
  • 6 drops almond extract

Peanut Butter Nutella

  • 2 Tbsp peanut butter powder such as PB2
  • 1 tsp honey or to taste
  • 2 tsp Nutella
  • 1 Tbsp peanuts unsalted, chopped

Banana Coconut

  • 1/2 cup coconut milk canned, light, substitute for 2% milk
  • 1/2 banana mashed well, well ripened
  • 2 Tbsp coconut shredded
  • 1/8 tsp coconut extract
  • 1 tsp brown sugar or to taste, packed
  • 2 Tbsp nuts mixed unsalted, chopped

Chocolate

  • 1/2 banana mashed well, overripe
  • 2 tsp unsweetened cocoa powder Dutch processed or regular
  • 1/4 tsp vanilla extract
  • 2 tsp brown sugar or to taste, packed
  • 2 - 3 tsp chocolate chips mini, semi-sweet
  • 2 strawberries sliced (optional, fresh

Maple Brown Sugar

  • 2 tsp brown sugar or maple syrup, packed
  • 4 drops maple extract or to taste (each brand may vary a little in stength
  • 2 Tbsp pecans chopped

Apple Pie

  • 2/3 cup apple peeled and finely chopped, honey crisp variety
  • 1/4 tsp ground cinnamon
  • 1 tsp brown sugar or to taste, or maple syrup, packed
  • 1/8 tsp vanilla extract
  • 1/2 Tbsp butter (optional)
  • 1 Tbsp dried cranberry optional, dried cranberries and/or chopped walnuts
  • 1 Tbsp walnut optional, dried cranberries and/or chopped walnuts

Pumpkin Pie

  • 1/4 cup pumpkin puree
  • 1/2 tsp (scant) ground cinnamon
  • 1 fair pinch ground ginger
  • 1 fair pinch ground nutmeg
  • 1 Tbsp maple syrup or to taste
  • 1/4 tsp vanilla extract
  • 2 Tbsp pecans chopped

Berries and Cream

  • 1/2 cup mixed fresh berries thawed and drained (dice strawberries, or frozen
  • 2 tsp honey or to taste
  • 1/8 tsp vanilla extract
  • 2 Tbsp half and half

Instructions

Almond Butter Banana Flax

  1. In a medium microwave safe bowl* stir together oats, milk, water, salt, banana, and flax. Heat in microwave 2 1/2 - 3 minutes. Stir in almond butter, honey and almond extract. Let rest a few minutes to cool. Thin with a little more milk as needed. 

Peanut Butter Nutella

  1. In a medium microwave safe bowl stir together oats, milk, water and salt. Heat in microwave 2 1/2 - 3 minutes. Stir in peanut butter powder and honey. Let cool a few minutes then dollop and swirl in Nutella. Top with peanuts. 

Banana Coconut

  1. In a medium microwave safe bowl stir together oats, coconut milk, water, salt and banana. Heat in microwave 2 1/2 - 3 minutes. Stir in shredded coconut, brown sugar and coconut extract. Let cool several minutes. Top with nuts.

Chocolate

  1. In a medium microwave safe bowl stir together oats, milk, water, salt, banana and cocoa powder. Heat in microwave 2 1/2 - 3 minutes. Stir in vanilla extract and brown sugar. Let cool several minutes then top with chocolate chips and strawberries.

Maple Brown Sugar

  1. In a medium microwave safe bowl stir together oats, milk, water and salt. Heat in microwave 2 1/2 - 3 minutes. Stir in brown sugar and maple extract. Let cool several minutes. Top with pecans. 

Apple Pie

  1. Add apples and water to a medium microwave safe bowl. Heat in microwave for 2 minutes. Then stir oats, milk, salt and cinnamon and heat 2 minutes longer. Stir in brown sugar, vanilla and butter. Let cool several minutes. Top with cranberries or walnuts if desired. 

Pumpkin Pie

  1. In a medium microwave safe bowl stir together oats, milk, water, salt, pumpkin, cinnamon, ginger, and nutmeg. Cook in microwave 2 1/2 - 3 minutes. Stir in maple syrup and vanilla extract and let cool several minutes. Top with pecans.

Berries and Cream

  1. In a medium microwave safe bowl stir together oats, milk, water and salt. Cook in microwave 2 1/2 - 3 minutes. Stir in berries, honey and vanilla. Let cool several minutes. Top with half and half or cream.
  2. *Any of these variations can be cooked on the stove top as well, just cook according to package directions.
