Instructions

  1. Combine the oats and the milk in a small bowl. Let it sit for an hour.
  2. Heat the oven to 400ºF.
  3. Prepare a 12-cup muffin pan by spraying with nonstick cooking spray.
  4. In a large bowl, combine the applesauce, egg and vanilla extract. Stir in the oat mixture.
  5. Add the melted butter and stir to combine.
  6. Add the flour, brown sugar, baking powder, cinnamon, baking soda and salt. Stir just until combined.
  7. Divide the mixture evenly between 12 cups, about 2/3 full.
