Oatmeal Muffins
Description
This recipe begins by soaking oats in milk for an hour to soften them and incorporate moisture. Applesauce blends with egg and vanilla to provide natural sweetness, moisture, and binding effects. Melted butter adds richness. The wet mixture is combined with dry ingredients including whole wheat flour, brown sugar, baking powder, baking soda, salt, cinnamon, and a small amount of sugar for topping. The batter is mixed gently just until combined to avoid toughness. Batter is portioned into a greased or sprayed 12-cup muffin pan. After sprinkling sugar on top, muffins bake at 400°F until cooked through and a toothpick inserted into the center comes out clean, usually about 14 minutes.
The resulting muffins are moist with soft oats and a tender crumb that carries gentle cinnamon and vanilla flavor. The applesauce supplements sweetness and keeps them moist without added oil beyond the butter.
These muffins provide a somewhat wholesome option for breakfast or snack time and accommodate variations by adjusting sugar or spices as preferred.
