Oatmeal Raisin Protein Cookies
Description
The recipe blends dry ingredients including old-fashioned rolled oats, unsweetened shredded coconut, vanilla protein powder, chia seeds, cinnamon, salt, and raisins. Wet ingredients consist of mashed ripe bananas, unsweetened applesauce, melted coconut oil, and vanilla extract. Mixing wet into dry results in a thick, sticky dough.
Shaping the dough into cookie balls flattened slightly, then baking at 350°F for 18 to 20 minutes, yields cookies with slightly crisp edges and tender interiors, highlighting the oat and raisin flavors. Chia seeds add modest nutrition and texture.
These cookies provide a way to enjoy a protein-enhanced snack with familiar flavors supporting energy needs. They suit casual baking and healthy snack options.
