Description
This dip begins by peeling and roughly dicing onion or shallots, then cutting Camembert cheese and unsalted butter into small pieces. These ingredients are placed with cream cheese, paprika, and wheat beer into a food processor and pulsed until fairly smooth and well blended. The result is a creamy, spreadable dip with a mild cheese background amplified by the slight bitterness and body of the beer, aromatic warmth from paprika, and a fresh crunch from the raw onion.
Obatzda can be served immediately as a soft, mild spread or chilled and allowed to firm up. If chilled, bringing it back to room temperature and stirring before serving helps restore a softer texture and intensifies flavors. It makes a traditional accompaniment to German-style breads, pretzels, or vegetable sticks, offering a savory, richly textured option for appetizers or snacks.

- 4 oz Camembert cheese 4 oz is approx ½ a round (or similar camembert-style cheese
- 2 tablespoon butter unsalted
- ¼ cup cream cheese
- 1 teaspoon paprika
- 2 tablespoon wheat beer
Instructions
- Peel and roughly dice the onion and cut the camembert and butter in to roughly bite sized pieces. Put everything in a food processor and pulse together until fairly smooth ad well-blended. Serve immediately, or you can chill and serve later - you will probably want to allow it to come to room temperature and stir before serving if you chill it as otherwise it will be much firmer.
