Oklahoma Fried Onion Burger
Description
This recipe calls for thinly slicing yellow onions and spreading them onto flattened ground beef patties seasoned simply with salt and pepper. The patties are smashed onto a preheated griddle or cast iron skillet coated with vegetable oil. The onions integrate into the surface of the burger as it cooks, softening and caramelizing without burning. Toasting the hamburger buns face-down on the griddle adds a browned edge and texture contrast.
The burgers cook quickly over medium-high heat, developing a seared crust while remaining juicy inside. Cheese slices are added near the end to melt over the patties. The onions become part of the flavor matrix and texture, giving the burger a distinct savory sweetness alongside the beef.
Serving the fried onion burgers hot is important for the juiciest experience. Toppings like ketchup, mustard, mayo, lettuce, tomato, pickles, or jalapeños can be added according to preference. The technique works well in a skillet or on a grill if a flat griddle is unavailable.
Precook toppings and toast buns before cooking patties since the burgers cook fast. Maintaining a hot cooking surface encourages a good sear and safe cooking temperature. Variations can include seasoned salt blends or alternate cheese types.
Ingredients
- 2 cups onion thinly sliced - I use a mandoline to get ultra thin slices, yellow
- 1 pound ground beef 80/20
- 1 teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon vegetable oil
- 4 Hamburger Bun
- 4 lices cheddar cheese or American cheese
Instructions
- Thinly slice the onions, using a sharp knife, or a mandoline.
- Combine the ground beef, salt and pepper, then divide it into 4 quarter-pound balls of beef.
- Heat a flat top grill, cast iron skillet, or griddle to medium-high heat.
- Add the vegetable oil to the griddle and place the buns face-down on the griddle. Toast the buns for approximately 1 minute, or until browned around the edges. Set the buns aside.
- Spray the back of a large flat metal spatula with cooking spray. Place each of the balls of ground beef on the hot griddle. Use the back of the spatula to smash the ground beef into flattened burger patties. Cook for 1 minute.
- Add approximately ½ cup of thinly sliced onions on top of each smashed burger patty.
- Smash the onions into the patties. Carefully flip the burgers, so the onions are now on the bottom. Cook for 3-4 minutes.
- Place a slice of cheese on each burger patty and allow it to melt over the burgers for 1-2 minutes.
- Use a spatula to flip the fried onion burgers onto the toasted buns, with the onion facing up. Add the top bun and serve immediately.
Notes
- For extra flavor, substitute salt and pepper with a hamburger seasoning blend.
- Prepare buns and toppings in advance to serve the burgers hot and fresh right off the griddle.
- Ensure your griddle or skillet is preheated to around 400°F before adding patties to achieve a good sear and food safety.
- If a flat griddle isn’t available, use a cast iron skillet; cook in batches if needed due to size limits.
