Okra Chips

Okra Chips are thinly sliced fresh okra pods baked into a crispy, savory snack. Marinated briefly in white vinegar water, then coated with olive oil, garlic powder, and salt, the okra slices crisp up in a two-stage baking process. The low-temperature drying after an initial high-heat bake ensures a crunchy texture without sogginess, capturing okra’s unique flavor in chip form.

Description

The recipe starts by slicing fresh okra pods lengthwise and soaking them in a vinegar-water mix to aid texture and flavor. After draining and drying, the slices are tossed with olive oil, kosher salt, and garlic powder for seasoning. They bake at a high temperature (500°F) initially, getting golden and slightly crisp, then the oven temperature is reduced to 170°F with the door slightly opened to slowly dry and crisp the chips thoroughly over 2-3 hours.

This process creates thin chips with a satisfying crunch and subtle garlic seasoning while balancing okra’s characteristic freshness. Cooking time varies depending on pod size and humidity, so testing doneness after two hours is advised. Cooling completely before storing helps maintain crispness. These chips can be kept at room temperature for a few days in an airtight container.

Ingredients

Servings
  • 1 pound okra fresh
  • 1 tablespoon white vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat the oven to 500 degrees.
  2. Rinse the okra and slice each pod lengthwise.
  3. Place the sliced okra in a large bowl with enough water to completely cover. Add the vinegar and mix well. Let stand for 15 minutes, stirring every 5 minutes.
  4. Drain and rinse the sliced okra. Pat dry with paper towels.
  5. Place the prepared okra in a large bowl and drizzle over the olive oil. Sprinkle in the salt and garlic powder. Toss until all pods are coated evenly with the oil and seasonings.
  6. Put the seasoned okra on a foil-lined baking sheet. Bake for 20 minutes, turning the okra halfway through the cooking time.
  7. Remove the pan from the oven and re-set the temperature to 170 degrees. When the oven has cooled to 170, return the pan to the oven and prop the door slightly open.
  8. Continue to bake for 2-3 hours or until crisp.

Notes

  • Cooking time depends on okra size and humidity; check crispness after 2 hours and extend baking if needed.
  • Cool chips completely before storing to keep them crisp.
  • Store in a sealed container at room temperature for 2-3 days.
