Old Bay Seasoning

Old Bay Seasoning is a spice blend featuring celery salt, paprika, black pepper, cayenne, and a warming array of ground spices like mustard, mace, cinnamon, cardamom, allspice, cloves, and ginger. This blend is designed to add depth and mild heat to seafood and various dishes. Stored in an airtight container away from light, it maintains freshness and flavor for up to two months.

Description

This homemade Old Bay Seasoning replicates the classic mix of spices characterized by celery salt, sweet paprika, and a balance of pungent and warm spices including black pepper, cayenne, mustard, mace or nutmeg, cinnamon, cardamom, allspice, cloves, and ginger. The combination ensures layers of mild heat, sweetness, and aromatic warmth. The recipe involves simply mixing all ground spices evenly and storing them properly in a sealed container to preserve potency. Often used on seafood, the seasoning can be scaled up for frequent use. Measuring "pinches" carefully ensures consistent flavor balance.

Ingredients

Servings
  • 1 tablespoon celery salt
  • 1/4 teaspoon paprika
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 pinch dry mustard ground
  • 1 pinch mace may substitute a teensy pinch nutmeg, ground
  • 1 pinch ground cinnamon
  • 1 pinch ground cardamom
  • 1 pinch ground allspice
  • 1 pinch cloves ground
  • 1 pinch ground ginger

Instructions

  1. Stir together all the ingredients in a small bowl. Transfer to a container of some sort that has a tight-fitting lid—a glass jar with a screw-top lid works spectacularly.
  2. Set aside in a cool, dark place and use within a couple months.

Notes

  • Double or triple the recipe if you plan to use Old Bay Seasoning often.
  • Store the seasoning in an airtight container in a cool, dark place for up to two months to maintain flavor.
  • Grinding spices fresh before mixing enhances the seasoning's potency; measure after grinding for accuracy.
  • A pinch can be measured as 1/16 teaspoon for precision.
