Old Bay Seasoning Recipe
Description
The recipe for Old Bay Seasoning combines several dried spices including celery salt, finely ground bay leaves, mustard, and black pepper with aromatic spices such as ground ginger, paprika, allspice, cloves, nutmeg, white pepper, red chili flakes, cardamom, cinnamon, and mace. The careful balance of these ingredients creates a layered seasoning with notes of earthiness, mild heat, and sweetness.
To prepare, all ingredients are mixed together and stored in a cool, dark place to preserve freshness for up to six months. This seasoning mix is versatile and can enhance a variety of dishes, particularly seafood and poultry, by adding complexity without overpowering other flavors.
Preparing your own seasoning also allows for adjustments to suit taste preferences, including altering heat levels or emphasizing particular flavor notes based on ingredient sourcing and freshness.

Notes
- Celery salt can be homemade by drying and crushing celery leaves in an oven before combining with salt.
- Use finely ground bay leaves (laurel leaf) for better integration and pungency in the seasoning blend.
- Freshly grate whole nutmeg for a stronger flavor and to maintain potency in the mix.
- Ground cardamom can be purchased or freshly ground from green pods for best aroma.
- Mace, the outer coating of the nutmeg pod, provides warmth and can be substituted with equal parts nutmeg if not available.
- Store the seasoning airtight in a cool dark place to maintain flavor for up to six months.
