Old Bay Shrimp Boil

The Old Bay Shrimp Boil is a classic seafood feast combining jumbo shrimp, smoked sausage, corn, red potatoes, and aromatic lemons. Spiced with Old Bay seasoning and enhanced with garlic butter, it's a flavorful communal dish with varied textures from tender shrimp to sweet corn and spicy sausage. Its preparation in boiling water followed by buttery finishing makes it suitable for gatherings and casual meals.

Description

This recipe calls for peeling and deveining large jumbo shrimp with tails on, slicing smoked sausage, cutting corn on the cob into pieces, halving small red potatoes, and quartering lemons. These ingredients are simmered stepwise in boil seasoned with Old Bay, onion, garlic, and lemon for layers of flavor and proper cooking times for each component. The shrimp are added last to retain tenderness. Once drained, the ingredients are tossed in melted butter mixed with herbs and seasonings.

The result is a bright and mildly spicy seafood boil with a balance of hearty sausage, tender potatoes, sweet corn, and juicy shrimp coated in a garlicky herb butter. Served immediately, it can be accompanied by simple sides like bread or summer salads, making it a full meal. The use of fresh or thawed frozen corn affects timing but both cook similarly.

Presentation can be casual, often laid out on a large surface for communal eating with plenty of napkins. Fresh corn adds sweetness in summer, while frozen corn works well in colder months. Leftover mixture can be seasoned further as desired before serving.

Ingredients

Servings

  • 1 onion cleaned and cut into large pieces, medium
  • 4 lemon 2 for cooking, 2 for serving, plural
  • ½ cup butter unsalted
  • 4 cloves garlic cleaned and smashed
  • cup Seafood Seasoning like Old Bay
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 Tablespoons parsley chopped, fresh; plus more for garnish

Instructions

  1. Fill large pot with water. Quarter two lemons and add to the water. Then add onion, garlic and seafood seasoning to water. Bring water to boil.
  2. Clean and cut potatoes in half. Add the potatoes to the boiling water, cook for 10-12 minutes or until just barely fork tender

  4. Add shrimp to boiling water and cook an additional 2-3 minutes or until pink.

  6. In a microwave safe bowl melt the butter. Add salt, pepper and 2 tablespoons chopped parsley to butter and whisk to combine.

Notes

  • The dish serves as a complete meal but can be paired with summer salads like macaroni or potato salad for gatherings.
  • Frozen shrimp and corn can be used but should be fully thawed before cooking.
  • Fresh corn is preferred seasonally for flavor, but frozen corn on the cob cooks in the same time.
  • For a traditional presentation, spread the cooked boil on newspapers at the table with ample napkins.
