Description
Old Fashioned Cornbread Dressing uses dried cornbread cubes mixed with sautéed celery and onion softened in butter. The addition of poultry seasoning along with kosher salt and black pepper brings depth to the flavor profile. Warm chicken or vegetable broth is gradually stirred in to hydrate the bread mixture to the desired consistency before baking in an ovenproof dish until piping hot.
The finished dressing has a tender yet moist texture from the saturated bread and softened vegetables, brought together through gentle baking. It offers a traditional accompaniment to turkey or chicken dinners but can also serve as a stand-alone dish.
This recipe allows for vegetable broth substitutions to suit vegetarian diets, and seasoning can be adjusted if using homemade bread instead of seasoned prepared stuffing. The dressing will reheat well if prepared ahead, with reheating time varying based on whether it comes straight from the refrigerator or is already warm.
Ingredients
- 5 cups cornbread stuffing or equivalent cubed dried bread
- 1 1/2 cups celery sliced, about 3 ribs
- 1 1/2 cups onion chopped, about 1
- 8 ounces butter unsalted
- 2 cups chicken broth (vegetable broth may be substituted for vegetarian version)
- 2 teaspoons poultry seasoning or to taste
- kosher salt to taste
- black pepper to taste
Instructions
- Melt butter in a large skillet, saute celery and onion until soft and translucent, about 8 minutes.
- In a saucepan, heat up 2 cups of chicken or vegetable broth.
- In a large bowl, toss cornbread cubes with sauteed onions and celery (don't forget the butter!).
- Add the broth, a ladle at a time, tossing well each time until dressing is desired moistness. (See notes.)
- Place in a oven proof baking dish and heat until piping hot. (See notes.)
Notes
- Use seasoned prepared cornbread stuffing or adjust seasoning if using homemade bread.
- Vegetable broth can replace chicken broth for a vegetarian version.
- If poultry seasoning is unavailable, substitute dried sage and thyme.
- For stuffing a bird, reduce broth quantity since turkey juices add moisture.
- Make ahead by wrapping and refrigerating; reheat thoroughly before serving, adjusting time based on starting temperature.
