Old Fashioned Creamed Peas

Old Fashioned Creamed Peas offers tender peas cooked and combined with a white cream sauce made from butter, flour, milk, and seasonings. This side dish delivers a creamy texture with subtle sweetness from the peas and a delicate savory flavor enhanced by onion and garlic powder. It is a classic accompaniment that balances freshness and richness.

Description

This recipe begins by cooking frozen peas until tender, either on the stove or microwaved, without the need to thaw first. After draining excess water, a roux is prepared by melting butter and whisking in flour, then gradually incorporating whole milk or half-and-half to form a smooth, rich sauce. Onion powder, garlic powder, sugar, salt, and black pepper season the mixture, enhancing depth of flavor without overpowering the natural sweetness of the peas.

The final dish has a thick, creamy texture that coats the peas well, offering a comforting contrast to other meal components. It can be served hot as a vegetable side dish and is familiar in traditional home-cooked meals.

The notes emphasize using whole milk or half-and-half to achieve a richer, more satisfying sauce due to the fat content. Adjust pea cooking time to preference for texture – softer or with a slight bite. Additional vegetables or crispy bacon bits can be added for variety in texture and flavor.

Instructions

How To Cook Peas:

  1. This recipe begins with cooking frozen peas. Cook peas as per packet instructions.
  2. Stove Top Method:
  3. I prefer this easy method to cook peas. No need to thaw peas, use them frozen directly.Add frozen peas to a sauce pan. Add little more than ¼ cup water. Cook on medium flame. Frozen peas don’t take long to cook. It took about 5 minutes for peas to be ready.
  4. Microwave Method:
  5. Place frozen peas in microwave safe bowl. Add 1 tablespoon water. Cook on full power for 3 to 4 minutes.Peas are ready to use.
  6. You can skip cooking peas and use it directly in the recipe. Simply thaw peas in 4 cups of water. Drain and use it.
  7. Canned Peas:
  8. Empty peas from can including the liquid into a saucepan. Heat it until it begins to boil. Drain and peas are ready to use.
  9. Once peas are cooked remove it from heat. Drain off any excess liquids left in the pan. Transfer to a bowl.

How To Make White Cream Sauce:

  1. Heat a medium pot or skillet (depending on the quantity you are making). Add butter to pot and melt it.
  2. Whisk flour in butter. Cook on low heat for 2 minutes with constant stirring.
  3. Add all the spices quickly– onion powder, garlic powder, salt and ground pepper.
  4. Gently pour milk (or half n half) into the pot.
  5. Keep whisking while adding milk.
  6. Cook with constant whisking on low heat for about 5 minutes or until sauce is smooth.
  7. Sauce should be thick but in pouring consistency.

Mix Together:

  1. Once cream sauce is cooked and ready, immediately pour it over hot peas.
  2. Stir everything together until coated well.
  3. Serve immediately.

Notes

  • Cook frozen or canned peas for 2 to 4 minutes for softer texture; less time if firmer peas are preferred.
  • Use whole milk or half-and-half to ensure a rich, creamy sauce thanks to higher fat content.
  • Onion powder and garlic powder are optional but recommended to enhance flavor.
  • Whisk butter, flour, and milk gradually to prevent lumps and burning; aim for smooth sauce consistency.
  • Additional vegetables like potatoes, carrots, or mushrooms may be incorporated for variety.
  • For extra texture, add crispy bacon bits just before serving.
