Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons butter (melted)
  • 1 teaspoon vanilla

Instructions

  1. Heat the griddle or pan over medium-high heat. Let heat while you make the pancake batter. Reduce heat to medium-low heat.
  2. Grease the griddle or pan with butter.
  3. Sift together all the dry ingredients, including the flour, sugar, baking powder, baking soda, and salt. Whisk all dry ingredients to thoroughly combine.
  4. Pour the wet ingredients into the bowl with the dry ingredients and whisk together.
  5. Whisk just until the batter is smooth and most lumps are gone.
  6. Using a 1/4 cup measuring cup, pour the pancake batter onto the greased hot griddle or skillet.
  7. Cook for a minute or 2 until the edges bubble.
  8. Using a wide spatula, slide it under the pancake, and using your wrist, flip it over and cook for another minute or so.
  9. Remove from griddle and place on a plate. Top with butter and maple syrup. Enjoy!

Notes

  • If you don't have buttermilk, just add 2 tablespoons white vinegar to 1 cup of milk and let it sit for 5 minutes. Then use it in the recipe in place of buttermilk.
