Description

Old Fashioned Strawberry Jam starts with washed and stemmed strawberries that are mashed or pureed and mixed with plenty of sugar. After sitting for a couple hours, the sweetened fruit is cooked over medium heat to a boil, then further boiled at higher heat until it reaches 220°F, which is the setting point for jam consistency. Lemon juice adds acidity and helps preserve color and flavor.

The jam is poured into clean jars that are sealed and processed in a boiling water bath to ensure shelf stability and prevent spoilage. This recipe yields about ten half-pint jars of jam.

When jars fail to seal correctly, the jam should be refrigerated and consumed within a few weeks. Once processed, the jam can be stored in a cool, dry place for up to one year.

  • 2 quarts strawberries
  • 5 cups sugar heaping
  • 1/2 cup lemon juice

Instructions

  1. Wash strawberries and remove the stems.
  2. Chop, mash or puree strawberries and stir in the sugar. Let sit for 2 hours.
  3. Add strawberry mixture to a large pot and cook slow over medium heat until it boils, stirring often. Then turn up the heat to med-high and boil fast for 5 more minutes or until candy thermometer says 220 degrees F.
  4. Add in lemon juice and stir. Boil 5 minutes longer.
  5. Pour jam into clean jars and add lids. Place in a hot water bath canner and boil for 10 minutes. Remove from water and let cool to room temperature. Store in a cool dry place for up to 1 year.

Notes

  • Store properly canned jars in a cool, dry place for up to one year.
  • Jars that don't seal properly should be refrigerated and used within a couple of weeks.
  • This recipe yields approximately 10 half-pint jars of jam.
