Description
This salad features green beans, yellow beans, red kidney beans, and optionally lima beans, all canned, drained, and rinsed. Raw sliced green bell pepper, white onion, and diced celery add a crunch and freshness. These are combined in a bowl and topped with a warm, sweet-tangy dressing heated until sugar dissolves, made from sugar, white vinegar, vegetable oil, celery seed, salt, and black pepper.
After pouring the dressing over the bean and vegetable mixture, it is stirred well and refrigerated overnight. This resting time allows the beans and vegetables to absorb the dressing’s flavors, mellowing the acidity and sugar, and blending the ingredients. Ingredients
- 14 ounces green beans 1 can, drained and rinsed, canned
- 14 ounces yellow beans 1 can, drained and rinsed, canned
- 14 ounces red kidney beans 1 can, drained and rinsed, canned
- 14 ounces lima beans 1 can, drained and rinsed, optional, canned
- ½ cup green bell pepper thinly sliced
- ¾ cup white onion sliced
- ¾ cup celery chopped, diced
DRESSING
- ⅔ cup granulated sugar
- ½ cup white vinegar
- ½ cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon celery seed
- ½ teaspoon black pepper
Instructions
- Drain all of the beans well. Combine beans, green pepper, celery and onion in a bowl.
- Heat all dressing ingredients in a small saucepan until sugar is dissolved and mixture is hot.
- Pour the hot dressing mixture over the beans and toss to coat. Refrigerate overnight turning or stirring occasionally.
Notes
- Shake or turn the salad occasionally while marinating to ensure even flavor distribution.
- Different beans can substitute or be added, such as lima, navy, chickpeas, or cannellini beans, fresh or cooked dried beans may be used.
- Choose white onions with papery white skin for milder flavor in the salad.
- Use celery seed rather than celery salt for authentic dressing flavor; celery seed is available in spice aisles and also complements coleslaw dressings.
