Ombre Sweet Wine Slush
Description
This recipe uses three varieties of sweet wine—red, pink moscato, and white Riesling or moscato—each frozen into ice cube trays separately. The frozen wine cubes are blended with measured amounts of cooled simple syrup and xanthan gum to achieve a slushy but thick texture that holds form. The xanthan gum adds body without altering flavor.
The slush from each wine variety is layered carefully in glasses starting with red at the bottom, then pink, topped by white, creating a gradient or ombre visual effect. Optional garnishes like fresh raspberries and mint add a fresh, colorful touch.

Ingredients
- 1 (750 ml) sweet red wine bottle
- 1 (750 ml) pink moscato wine
- 1 (750 ml) Riesling wine or moscato wine
- 1 cup simple syrup divided, homemade or store-bought
- 3/4 tsp xanthan gum divided
Instructions
- Pour red wine into 2 clean ice cube trays. Pour pink wine into 2 other ice cube trays. Pour white wine into 2 more ice cube trays. Place all trays in freezer and freeze several hours, or until frozen.
- Add white wine cubes to blender, along with 1/3 cup simple syrup and 1/4 tps xanthan gum. Process until blended to slushy consistently. Scoop into a bowl.
- Repeat with pink wine cubes (plus 1/3 cup simple syrup and 1/4 tps xanthan gum), and scoop into another bowl. Repeat last time with the red wine cubes (plus 1/3 cup simple syrup and 1/4 tps xanthan gum) and scoop into one more bowl.
- Spoon red slush into the bottom third of serving glasses. Spoon pink slush into the second third of the serving glasses. Top with white wine slush.
- If desired, garnish glasses with fresh raspberries and fresh mint.
Notes
- Prepare simple syrup by dissolving equal parts sugar and water, boiling briefly and then cooling before use.
- The sweetness level of the slush can be adjusted by varying the amount of simple syrup used during blending.
- If a thinner drink is preferred, add white grape juice while blending each wine layer.
- Xanthan gum is optional but recommended for a thicker slush texture; omit if unavailable.
