Omelet - Italian Style
Description
The Omelet - Italian Style recipe uses organic pastured eggs beaten and cooked gently to form a soft omelet base. A filling of ground sausage, gently browned and mixed with sautéed red bell peppers and onions, adds a savory depth. Swiss cheese is included to bring a creamy, mild richness that balances the meat and vegetables. Olive oil is used throughout the cooking process to enhance flavor and prevent sticking without overpowering the dish.
The cooking method involves separately sautéing the vegetables and sausage, then folding them inside the cooked egg layer, producing an omelet with a tender texture and a warm, hearty filling. This approach allows control over each component's doneness and flavor.
This omelet can be served as a fulfilling breakfast or brunch item. Its mix of protein and vegetables makes it satisfying and balanced, without complex ingredients or preparation techniques. The recipe suggests covering cooked omelets with foil to keep warm while preparing additional servings.
Ingredients
- 8 egg organic pastured
- ½ lbs ground sausage
- 2 bell pepper chopped, red
- 1 onion chopped, medium
- ½ cup swiss cheese shredded
- salt to taste

- Cook the ground sausage in the skillet until cooked through, about 5 -7 minutes. Transfer to the plate with the onion and bell peppers.

Add egg mixture to hot skillet and cook while the eggs sit undisturbed for about a minute until egg mixture is set. With a spatula flip the omelet on the other side and cook for about 30 seconds.
- Transfer to a plate, add filling and fold omelet in half. While making the remaining omelets, cover with foil to keep warm.
