One Banana Banana Bread

This One Banana Banana Bread blends ripe banana, butter, egg, and a milk mixture with flour, sugar, baking soda, and salt to create a moist loaf. Optional dark chocolate chips and walnuts add texture and flavor contrast. Baked until golden and tested with a toothpick, the bread offers sweet, soft slices suitable for breakfast or snacks.

Description

One Banana Banana Bread starts with mashing a ripe banana into softened butter to create a smooth, flavorful base. The recipe uses a combined egg and milk liquid to enrich the batter, with vanilla for aroma. Flour, sugar, baking soda, and salt are incorporated to provide structure and leavening. The optional dark chocolate chips and walnuts fold in add layers of texture and richness. Baking the batter in a greased loaf pan at 350°F for 40-45 minutes yields a golden crust and moist crumb, confirmed by a clean or nearly clean toothpick test.

This banana bread slices well for breakfasts, snacks, or casual desserts. The optional mix-ins allow for customization to personal taste or pantry availability. It can also be baked in muffin tins for individual portions with adjusted cooking times.

The recipe notes suggest variations such as using pecans or peanut butter chips, swapping milk for buttermilk or yogurt, and incorporating extra mashed banana for added moisture and flavor. Baking in different pans offers flexibility depending on serving preference.

Ingredients

Servings
  • 1 ripe banana
  • 1/2 cup butter
  • 1 large egg
  • milk to add to egg to equal one cup
  • 1 1/2 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 pinch salt
  • 1/2 cup dark chocolate chips optional
  • 1/2 cup walnuts optional, roughly chopped

Instructions

  1. Preheat oven to 350F. Grease a 9x5 loaf pan.
  2. Add the softened butter and banana to the bowl of a stand mixer, fitted with a paddle attachment, and mix until blended and smooth. (Or, if you don't have a stand mixer, mash the banana by hand with a fork, and add in the softened butter along with the rest of the ingredients)
  3. Add the egg to a liquid measuring cup and then add milk to make one cup.
  4. Add the egg and milk, vanilla, flour, sugar, baking soda, and salt, and mix until no lumps remain.
  5. Fold in the chocolate chips and walnuts until evenly distributed.
  6. Pour the batter into a prepared loaf pan, and bake for about 40-45 minutes, until risen and golden brown on top, and a toothpick inserted in the middle comes out without batter clinging to it. (Moist crumbs are fine.)

Notes

  • Chocolate chips and walnuts are optional but add texture and flavor to the banana bread.
  • Substitute pecans for walnuts or peanut butter chips for chocolate to vary the taste.
  • Buttermilk or yogurt can replace milk to alter moisture and tang.
  • Bake the batter as muffins by adjusting cooking time and using a muffin tray.
  • Using one ripe banana is effective, but adding a chopped second banana can intensify banana flavor.
