One Bowl Vegan Orange Cake

This One Bowl Vegan Orange Cake mixes whole wheat pastry flour with orange juice, vinegar, and a touch of vanilla to create a moist, tender cake with bright citrus notes. The batter comes together without eggs or dairy, and the baked cake has a soft crumb with a subtle tang from the orange and vinegar blend. It's suitable for serving plain or topped with a glaze or vegan frosting.

Description

The One Bowl Vegan Orange Cake combines flours including whole wheat pastry and all-purpose flour, along with cornstarch and powdered sugar, to form the base. Wet ingredients include fresh orange juice, cooking oil, vinegar, and vanilla extract. The vinegar acts as a leavening enhancer with baking soda, yielding a light texture despite the absence of eggs. Baking results in a soft, moist cake with a zesty orange flavor highlighted by the juice and optional zest addition.

The cake is baked in a prepared pan until a toothpick comes out clean, then cooled completely before slicing. Serving options include adding a vegan cream cheese frosting, whipped coconut cream with fruit, or a glaze made by mixing orange marmalade with liquor or juice for added moisture and flavor contrast.

The recipe suggests using finely ground powdered sugar to avoid graininess and offers tips for adapting the cake into a loaf with added nuts or dried fruit. Overbaking can dry the texture, but additional glaze or frosting can restore moisture. Making the cake in one bowl simplifies preparation and cleanup.

Notes

  • For a stronger orange flavor, add zest from a small or medium orange to the batter.
  • Use finely powdered sugar to ensure smooth texture in the cake.
  • Avoid overbaking to keep the cake moist; cool fully and add glaze or frosting to enhance moisture.
