Ingredients

  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 tablespoon sugar
  • ½ teaspoon garlic salt
  • 2 yeast Fleischmann's® RapidRise™ brand envelopes
  • ¾ cup milk 120º to 130ºF, very warm
  • ¼ cup olive oil
  • 1 package 4 ounces crumbled feta cheese
  • 2 cups spinach packed fresh leaves
  • 1 tablespoon olive oil
  • 1 package 8 ounces sliced fresh mushrooms
  • ½ cup red bell pepper roasted, chopped
  • ¼ cup kalamata olive chopped
  • 1-1/2 cups mozzarella cheese 6 ounces, shredded
  • ½ teaspoon Italian seasoning
  • basil optional, fresh

Instructions

  1. Mix batter ingredients together in a greased 8 X 8-inch baking dish and gently press into the bottom of the pan.
  2. Sprinkle with feta cheese and spinach.
  3. Sauté mushrooms in olive oil over medium-high heat for 2 minutes. Remove from heat and stir in roasted peppers and olives.
  4. Top batter evenly with mushroom mixture.
  5. Sprinkle with mozzarella cheese and herb seasoning.
  6. Bake by placing in a cold oven. Set temperature to 350° F; bake for 30-35 minutes, or until baked through. If desired, top with fresh basil just before serving.
