One Minute Mayonnaise

One Minute Mayonnaise is a quick homemade emulsified dressing made from olive oil, egg, Dijon mustard, lemon juice, and salt, blended together using an immersion blender. This technique yields a creamy, smooth mayonnaise with a fresh lemon touch, suitable for sandwiches, dips, or dressings.

Description

This mayonnaise recipe uses an extra-light-tasting olive oil combined with a whole egg, Dijon mustard, fresh lemon juice, and salt. The ingredients are placed in a tall, narrow container to facilitate emulsification when using an immersion blender. Starting the blender at the bottom, directly over the egg yolk, allows the oil and egg to emulsify properly. Blending begins slowly without moving the blender, then the blender is moved up and down until a thick, creamy consistency is reached in about 30 seconds.

The finished mayonnaise has a balanced tang from the lemon and mustard, with a smooth texture from the olive oil. It can be refrigerated for up to one week and used wherever mayonnaise is desired, such as in sandwiches, salads, or sauces.

  • 1 cup olive oil extra-light-tasting
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon lemon juice plus more to taste, fresh
  • 1/4 teaspoon salt

Instructions

  1. In a tall, wide-mouthed pint-size mason jar or similar container, combine the olive oil, egg, mustard, lemon juice, and salt. Let the ingredients settle while you plug in your immersion blender.
  2. Place an immersion blender in the liquid in the jar, directly over the egg yolk. You want the immersion blender to be at the bottom of your jar. This is very important. Do not attempt to plunge the immersion blender into the oil while it is running. You will not make mayo. Trust us. We’ve tried.
  3. Blend, without moving the blender, for 5 seconds to begin to emulsify the oil and egg, then very slowly move the blender up and down until the oil and egg are fully emulsified, about 30 seconds more.☞ TESTER TIP: If your immersion blender has multiple speeds, use low speed for emulsifying your mayo.
  4. Taste, and add a dash more lemon juice, if desired. Cover and store in the refrigerator for up to 1 week.
