One-Pan Monterey Chicken Pasta

This recipe combines bowtie pasta with diced tomatoes, chicken broth, shredded rotisserie chicken, barbecue sauce, Monterey jack cheese, bacon, and green onions all cooked together in one pan. The pasta absorbs the savory tomato and chicken broth base, while the BBQ sauce adds a tangy twist. Topped with melted cheese and crispy bacon, the dish balances creamy and smoky flavors in a hearty and satisfying skillet meal.

Description

One-Pan Monterey Chicken Pasta brings together pasta and cooked chicken in a flavorful tomato and broth base enhanced by the addition of green chiles from canned diced tomatoes. Cooking everything in a single skillet allows the bowtie pasta to simmer and absorb moisture, resulting in a tender texture enriched by the chicken broth. The final stir-in of barbecue sauce lends a smoky, sweet tang that complements the chicken and bacon. Once the cheese melts over the hot pasta, the dish is topped with crumbled bacon and sliced green onions for a crunchy, savory finish.

This pasta is a comforting, all-in-one dish ideal for a simple dinner where minimal cleanup is desired. It can be served alone or with a light salad for a complete meal. The use of rotisserie chicken reduces prep time while maintaining protein content.

Ingredients

Servings
  • 12 ounces bowtie pasta (or other small pasta)
  • 1 (14.5 ounce) can diced tomatoes with green chiles undrained
  • 2 1/2 /2 cups chicken broth (I like better than Bouillon base)
  • 2 cups chicken shredded rotisserie
  • 1/2 /2 cup barbecue sauce
  • 1 cup Monterey jack cheese or cheddar cheese; shredded
  • 4 Bacon cooked and crumbled, strips
  • 2 tablespoons green onion sliced

Instructions

  1. In a 12-inch skillet, add the pasta, tomatoes, and chicken broth. Bring mixture to a boil. Cover and reduce to a simmer. Cook pasta for 10-15 minutes, stirring every once in a while to make sure all parts of the pasta are covered and cooking.
  2. Once pasta is tender, remove lid, stir in the chicken, and heat for a couple of minutes until heated through and excess liquid is evaporated.
  3. Stir in BBQ sauce. Sprinkle with cheese and cover with lid until cheese is melted. Sprinkle with bacon and green onions. Serve immediately!
