One Pan Peach Salmon
Description
This recipe uses salmon filets marinated in a mixture of peach preserves, bourbon, olive oil, soy sauce, balsamic vinegar, honey, hot sauce, lemon juice and zest, smoked paprika, Dijon mustard, minced garlic, kosher salt, black pepper, and optional red pepper flakes. This marinade is split, with half reserved to baste the salmon after searing. Marinating allows the fish to absorb the flavor layers and tenderizes the flesh slightly.
The salmon is first seared skin-side up in an olive oil-coated oven-safe skillet to develop a lightly crisp exterior and seal in juices. Then sliced peaches are added to the pan to soften as the fish finishes cooking. Adding the reserved marinade before baking ensures the salmon remains moist and fruit flavors infuse. Baking at 375°F cooks the salmon through, with a target internal temperature of 135°F for the best texture. A rest period allows juices to redistribute.

Ingredients
- 4-6 salmon about 1½ pounds, skins on, filets
- 1 tablespoon extra virgin olive oil
- 3 peaches pitted, and sliced, medium
Marinade:
- 1/2 cup peach preserves
- 1/4 cup bourbon
- 2 tablespoons extra virgin olive oil
- 1 tablespoon soy sauce low-sodium
- 1 tablespoon balsamic vinegar
- 2 tablespoons honey or maple syrup
- 1 tablespoon hot sauce
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon smoked paprika
- 1 teaspoons Dijon mustard ground
- 2 cloves garlic minced
- 1 1/2 teaspoons kosher salt or to taste
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes optional
Instructions
- In a medium bowl, stir and combine the marinade ingredients.
- Set aside half of the mixture in the refrigerator, and add the rest to a Ziploc bag with the salmon filets.
- Seal the bag and mix it to coat the salmon filets. Marinate the salmon for at least 10 minutes, or one hour for the best results.
- When ready to cook it, preheat the oven to 375°F.
- Place an oven-safe skillet over medium-high heat and add the oil.
- Once the oil is hot, sear the marinated salmon fillets, skin side up, for about 2-3 minutes or until golden brown.
- Flip the salmon fillets and add the sliced peaches to the skillet. Cook for 2-3 more minutes until the peaches start to soften.
- Remove the skillet from heat, and pour the reserved marinade over the salmon and peaches.
- Transfer the skillet to the preheated oven and bake for about 10-12 minutes or until the salmon is cooked through. The internal temperature of fully cooked salmon should reach 135°F.
- Let it rest for 10 minutes, garnish with chopped green onions or parsley, and serve.
