One Pan Roasted Veggie and Chicken Sausage

This One Pan Roasted Veggie and Chicken Sausage dish combines savory chicken sausage with roasted broccoli, sweet potato, and red onion for a balanced meal. Tossed with garlic, olive oil, salt, and pepper, and roasted until tender, it offers a mix of textures and caramelized flavors, served optionally over grains and topped with sriracha for a mild heat kick.

Description

In this recipe, bite-sized pieces of chicken sausage are combined with chopped broccoli florets, sweet potato chunks, and roughly chopped red onion plus minced garlic. The ingredients are tossed in olive oil, seasoned with sea salt and black pepper, and spread on a baking sheet. Roasting in a 400°F oven first softens the vegetables and browns the sausage, then tossing midway ensures even cooking. The sweet potatoes become tender and lightly caramelized, while the broccoli and onion add contrasting textures.

The dish can be served directly or atop cooked rice, quinoa, or whole grains for a satisfying meal. Adding sriracha provides optional spice that complements the savory elements.
