One Pot Beef Taco Pasta

This one pot beef taco pasta combines ground beef cooked with onion, garlic, and taco seasoning, then simmered with pasta, diced tomatoes, green chiles, and beef broth. The pasta absorbs the flavorful broth and seasoning, and shredded cheddar cheese is added at the end for creaminess. The result is a hearty, saucy pasta dish with familiar taco flavors in a convenient single pot.

Description

One Pot Beef Taco Pasta starts by sautéing onion and garlic in olive oil, then browning ground beef seasoned with taco spice blends. Diced tomatoes and green chiles bring acidity and a mild heat which infuses into the dish during simmering. Adding pasta directly into the pot with beef broth allows the pasta to cook in the seasoned liquid, absorbing flavors and thickening the sauce.

The pasta shells become tender while the liquid reduces to a thick, saucy consistency. Finishing with shredded cheddar cheese adds a creamy, sharp contrast to the savory taco seasoning and tomatoes. The dish features a balance of textures with tender pasta and beef combined with melted cheese and mild spice.

This meal works well as a family dinner or casual weeknight option, offering comfort in one pot with limited cleanup. Serve it plain or with garnishes like sliced green onions to add fresh, mild onion flavor. The recipe uses store-bought taco seasoning for convenience, or you can use a homemade mix.

You can substitute the store-bought taco seasoning packet with your preferred homemade taco seasoning blend for customized flavor.

Ingredients

Servings
  • 1 Tbsp olive oil $0.16
  • 1 yellow onion $0.32
  • 2 cloves garlic $0.16, minced
  • 1/2 lb. ground beef $3.00
  • 1 packet taco seasoning $0.67
  • 1 oz. can diced tomatoes $0.79
  • 1 oz. can diced green chiles $0.67
  • 1/2 lb. pasta shells $0.50, small
  • 2 cups beef broth $0.26
  • 1 cup cheddar cheese $1.15, shredded
  • 2 green onion $0.20, sliced

Instructions

  1. Dice the onion and mince the garlic. Add the onion, garlic, and olive oil to a deep skillet or wide-bottomed pot. Sauté over medium heat until the onions are soft.
  2. Add the ground beef and taco seasoning and continue to cook and stir until the ground beef is cooked through.
  3. Add the diced tomatoes (with juices) and diced green chiles (with juices) to the beef and stir to combine.
  4. Finally, add the pasta and beef broth and stir to combine once again. It's okay if the pasta is not fully submerged under the broth.
  5. Place a lid on the pot and turn the heat up to medium-high. Allow the broth to come up to a full boil. Once boiling, give the pasta a stir, place the lid back on top, and turn the heat down to medium-low.
  6. Let the pasta continue to simmer, stirring every few minutes and always replacing the lid, for about 10 minutes or until the pasta is tender. There should be some thick saucy liquid left in the pot once the pasta is cooked.
  7. Add the shredded cheddar cheese and stir until it has melted into the sauce. Top with sliced green onions and serve!
