One Pot Cajun Chicken Alfredo Pasta

This One Pot Cajun Chicken Alfredo Pasta combines bite-sized chicken breast pieces seasoned with Cajun spices and seared until cooked, then simmered with fettuccini pasta in a creamy mixture of chicken broth and half and half. The pasta cooks directly in the sauce, absorbing the flavorful liquid to create a rich, slightly spicy Alfredo-style dish.

Description

The recipe begins by browning chicken breast pieces seasoned with half of the Cajun seasoning in olive oil, followed by adding minced garlic to develop savory depth. Then, a combination of chicken broth, half and half, remaining Cajun seasoning, salt, pepper, and garlic powder is added to the pot. Uncooked fettuccini pasta is stirred in and cooked covered until tender.

As the pasta cooks, it soaks up the creamy, mildly spiced liquid, creating a thick sauce that coats the noodles and chicken. The frequent stirring recommended in the instructions helps prevent sticking and ensures even cooking. The final addition of grated Parmesan cheese enriches the sauce with a salty, nutty finish characteristic of Alfredo.

This one-pot method simplifies cleanup while delivering a hearty meal combining protein, pasta, and a creamy sauce with Cajun seasoning's subtle heat and garlicky notes. It's suited for those seeking comfort food with a bit of spice and creaminess in a quick, streamlined preparation.

Ingredients

Servings
  • 1 pound chicken breast boneless skinless, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 2 teaspoon Cajun seasoning
  • 2 teaspoons garlic about 2 cloves, minced
  • 1 ½ cups chicken broth
  • 1 cup half and half
  • 1 teaspoon salt
  • 1 teaspoon black pepper ground
  • ¼ teaspoon garlic powder
  • 8 ounces fettuccini pasta uncooked
  • ½ cup Parmesan Cheese grated

Instructions

  1. Heat a large pot over medium-high heat and add 2 tablespoons olive oil. Add 1 pound boneless skinless chicken breast cut into bite-size pieces and half of the 2 teaspoon Cajun seasoning. Cook for about 5-7 minutes, stirring periodically until the chicken is cooked to an internal temperature of 165 degrees Fahrenheit and is no longer pink. Add 2 teaspoons minced garlic and continue cooking for 1 minute.
  2. Add 1 ½ cups chicken broth, 1 cup half and half, the remaining half of the Cajun seasoning, 1 teaspoon salt, 1 teaspoon ground black pepper, and ¼ teaspoon garlic powder to the pot and stir to combine. Add 8 ounces uncooked fettuccini pasta (you can break this in half if you would like) and stir.
  3. Cover the pot with a lid and bring to a rapid boil. Once boiling, remove the lid and reduce the heat to medium-low. Continue to cook for 10-12 minutes until the noodles are al dente and there is only about ¼ inch of liquid along the bottom. I recommend stirring frequently to avoid the noodles clumping together as they cook.
  4. Remove from heat and add ½ cup grated parmesan cheese, stirring until it is fully melted. Serve immediately.
