One Pot Garlic Butter Shrimp and Orzo
Description
One Pot Garlic Butter Shrimp and Orzo starts by marinating peeled, deveined raw shrimp in a mixture of olive oil, freshly squeezed lemon juice, lemon zest, minced garlic, crushed red pepper flakes, and seasoning. This imparts bright and mildly spicy flavors to the shrimp before cooking.
Separately, orzo is toasted in butter in a large skillet to develop a subtle nutty flavor and golden color. Minced garlic is added briefly before pouring in chicken stock. The liquid is brought to a boil then simmered with a cover until the orzo is tender and has absorbed most of the stock. Then the marinated shrimp are added, covered, and cooked until pink and opaque, ensuring they remain juicy and flavorful.
Freshly chopped parsley and a spritz of lemon brighten the dish just before serving. Optionally, additional melted butter can be stirred in for extra richness. This preparation delivers a comforting, harmonious meal combining textured orzo with tender, lemony shrimp and well-rounded seasonings.
Serve immediately for best texture and flavor. Adjust red pepper flakes to control the heat level according to preference.
Ingredients
- 1 pound Shrimp peeled and deveined, raw
- 3 tablespoons olive oil
- 1 lemon juiced and freshly zested
- 4 garlic minced, cloves
- ½ teaspoon red pepper flakes crushed
- salt kosher salt
- black pepper kosher salt
- 1 cup orzo
- 2 tablespoons butter unsalted
- 2 garlic minced, cloves
- 2 ¼ cups chicken stock
- 3 tablespoons parsley chopped, fresh
- lemon for spritzing, wedges
Instructions
- In a large bowl, combine the shrimp with the olive oil, lemon juice, zest, garlic, red pepper flakes and a big pinch of salt and pepper. Stir and let sit for 10 minutes.
- Heat the butter in a large skillet (I like a 12 inch) over medium heat. Once melted, stir in the orzo. Cook, stirring often, until the orzo is slightly golden and toasty. Stir in the garlic and cook for 30 seconds.
- Pour in the chicken stock and bring it to a boil. Reduce it to a simmer and cover the pot. Cook until the orzo absorbs the water and is fluffed up, about 12 to 15 minutes.
- Add in the shrimp to the orzo and stir. Cover the pot again and cook for another 5 to 8 minutes, or until the shrimp is pink, opaque and cooked through.
- Sprinkle with fresh parsley and a spritz of lemon. I like to stir in another 1 to 2 tablespoons of melted butter for optimal flavor, but this is up to you. Serve immediately!
Notes
- Marinate shrimp for about 10 minutes to let flavors infuse without overpowering.
- Toast orzo until lightly golden before simmering to enhance its flavor and texture.
- You can add extra melted butter at the end for a creamier finish, if desired.
- Serve immediately to enjoy the best texture of shrimp and orzo.
