One Pot Salmon with Lemon Cardamom Rice blends fragrant basmati rice cooked with cardamom, cloves, barberries, and lemon zest, topped with salmon fillets steamed within the same pot. The rice is aromatic with a hint of citrus and warm spices, while the salmon cooks gently on top, resulting in moist, flavorful fish and subtly spiced rice in a simple one-pot meal.

Description

This recipe starts by soaking barberries in a simple sugar syrup to soften them. Onions, cardamom pods, and cloves are gently caramelized in olive oil, releasing warm spices and sweet notes. Basmati rice, lemon zest, and drained barberries are stirred in before adding hot water and salt. The mixture cooks covered over low heat until the rice is tender.

About eight minutes before the rice finishes cooking, salmon fillets are placed on top and steamed until done. Once removed from heat, the dish rests briefly before the fresh dill and toasted almond flakes are stirred in, adding brightness and crunch. The final dish balances fragrant, spiced rice with tender salmon and nutty accents, making it a wholesome one-pot option.

  • 30 g sugar 1oz
  • 3 tbsp water
  • 30 g barberries 1oz
  • 10 cardamom pods split
  • tsp clove whole
  • 1 tbsp olive oil
  • 1 onion finely diced, large
  • 300 g basmati rice 10.5oz
  • 550 ml water 2.1 cups, hot
  • salt
  • ½ tsp lemon zest
  • 6 salmon fillet defrosted, frozen
  • mixed herbs chopped
  • 3 tbsp dill chopped
  • 2 tsp almond toasted flakes

Instructions

  1. Mix the sugar and water in a small pan over medium heat until the sugar dissolves. Switch of the heat, stir in the barberries and allow them to soak.
  2. Heat the olive oil in a pan, over medium heat, add the onion, cardamom, cloves and cook for up to 15 mins, stirring occasionally, until the onion starts caramelizing.
  3. Add in the rice, salt, lemon zest, the drained barberries and mix them in followed by the boiled water to the pan.
  4. Cover the pan, and cook over very low heat for 35 mins till the rice is soft.
  5. 8 mins before the rice is done add in the salmon, cover the rice and cook till done.
  6. Switch off the heat and let sit for 5 mins before stirring in the chopped dill and toasted almond flakes and serve.
