Ingredients
- 1 pound Italian sausage mild or spicy, cut into ½ inch pieces
- 1 large onion chopped
- 4 cloves garlic minced
- 14.5 ounces diced tomatoes 1 can
- 8 ounces tomato sauce
- 12 ounces pasta such as penne or fusilli, uncooked
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- salt and pepper to taste
- ½ cup Parmesan Cheese grated, for serving
Instructions
- In a large pot or Dutch oven, cook the sausage over medium-high heat until browned, about 5 minutes.
- Add the onion and garlic and cook until softened, about 3-4 minutes.
- Add the diced tomatoes, tomato sauce, pasta, broth, basil, oregano, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to medium-low and cover the pot.
- Simmer the pasta for about 15-20 minutes, or until the pasta is cooked through and the sauce has thickened. You may have to stir occasionally to make sure the pasta doesn't stick to the pot.
- Serve the pasta hot, garnished with grated Parmesan cheese, if desired.
Notes
- Sausage: Any type of sausage can be used, but for maximum flavor, try Italian or spicy sausage. If you prefer a lighter version, you can also use turkey sausage.
