One-Pot Spiralized Zucchini Noodle Miso Soup

This One-Pot Spiralized Zucchini Noodle Miso Soup features zucchini noodles simmered in vegetable broth flavored with miso soup packets and fresh asparagus. The broth is lightly spiced with sriracha and garnished with toasted sesame seeds and green onions, delivering a light and warming soup with a combination of tender noodles and crisp asparagus.

Description

The soup begins by spiralizing a large zucchini into noodles, which are then added towards the end of cooking for a delicate texture. Vegetable broth is brought to a boil and infused with the contents of miso soup packets. Asparagus spears are boiled briefly for tenderness before the heat is reduced for simmering.

The zucchini noodles cook gently, maintaining their shape and slight bite in the broth. Sriracha adds a gentle heat, balanced by nutty toasted sesame seeds and savory green onions which provide a fresh contrast. The one-pot approach simplifies preparation and cleanup.

This soup can be served hot as a light meal or starter. The ingredients combine to deliver clean, umami-rich flavors and a balance of textures with the soft broth, tender asparagus, and slightly crisp zucchini noodles.

Substitutes for miso packets are noted if unavailable, and nutritional information should be considered approximate. Adjust sriracha amount according to desired heat.
