Description
One Pot Turkey Pasta starts by sautéing onion and zucchini in olive oil, seasoned with salt and pepper until softened. Ground turkey and garlic are added and cooked through with herbs including basil and oregano. Marinara sauce and vegetable stock are poured in, brought to a boil, then penne pasta is added and simmered until al dente, absorbing flavors from the sauce and stock.
The pasta becomes infused with the savory sauce and tender turkey, while the zucchini adds subtle freshness. After cooking, grated Parmesan is stirred in off heat, enhancing creaminess and flavor.
The finished meal is garnished with fresh basil leaves and can be served as a satisfying main dish. Using one pot streamlines the cooking process and results in fewer dishes to wash.
Ingredients
- 2 tablespoons olive oil
- 1 onion diced
- 1 medium zucchini diced
- 1 pound ground turkey lean
- 3 garlic minced, cloves
- 1 teaspoon salt divided
- 1 teaspoon black pepper divided
- 1 teaspoon basil fresh
- ½ teaspoon oregano
- 2 cups marinara sauce jar
- 4 cups vegetable stock
- 1 pound penne pasta
- ½ cup Parmesan Cheese grated

Instructions
- In a large Dutch oven or large pot, heat olive oil over medium heat. Add onion and zucchini, season with half of the sale and pepper, and cook for 5-7 minutes, or until the vegetables start to soften.
- Add the turkey, garlic, remaining the salt and pepper, basil and oregano. Cook, breaking the turkey up into small chunks as it cooks, for 5 to 7 minutes or until cooked though.
- Add marinara and stock and bring to a boil. Once the liquid reaches a boil, add the pasta and reduce to a simmer. Cook, stirring often, for 15 to 17 minutes, or until the pasta is al dente.
- Stir the Parmesan cheese in off the heat and garnish with fresh basil before serving.
