One Pot Wonder Stuffed Pepper Skillet
Description
This dish starts by browning extra lean ground beef in a skillet to develop flavor and drain excess fat. Uncooked rice is toasted briefly in the beef to add a nutty note, then diced bell peppers and onions are added along with diced tomatoes, tomato sauce, and beef broth. Seasoning with Italian herbs, salt, pepper, and garlic infuses the mixture with classic Italian flavors.
The skillet is covered and simmered until the rice absorbs the liquid and becomes tender, typically 20-25 minutes for white rice or longer for brown rice. Finally, shredded Italian cheese blend is sprinkled over the hot mixture and allowed to melt under the covered skillet, creating a creamy, cheesy topping.
Serving this dish hot provides a comforting meal combining protein, vegetables, and grain in one pan. Its simplicity and all-in-one nature reduce cleanup and preparation time.
Ingredients
- 1 lb. ground beef extra lean
- ½ cup rice uncooked
- 1 (15 oz.) diced tomato petite, canned
- 1 (8 oz.) tomato sauce canned
- 1 cup beef broth
- 2 bell pepper seeded and chopped, medium, sweet
- 1 yellow onion chopped, small
- 2 tbsp. brown sugar packed
- 1 tsp. Italian seasoning
- 1 tsp. salt
- ½ tsp. black pepper ground
- ½ tsp. garlic 1 clove, minced
- 1 cup Italian cheese blend shredded
Instructions
- In a large skillet over medium-high heat, break up the beef with a wooden spoon. Cook until no pink remains, about 8 minutes. Drain the excess fat.
- Add the rice to the cooked beef. Cook until the rice is golden brown (2-3 minutes), stirring occasionally.
- Add the remaining ingredients, except for the cheese. Stir well. Bring to a rolling boil. Reduce the heat to medium low and cover the skillet.
- Cook, stirring occasionally, until the liquid is absorbed and the rice is tender. It will take 20-25 minutes for white rice and 40-45 minutes for brown rice.
- Top with cheese. Cover the skillet and let it rest for 5 minutes to melt the cheese.
