Description
This recipe begins by sautéing red onion in avocado oil until softened, which develops a flavorful base. Ground beef is then seared in the same skillet before breaking it up and mixing with garlic, bell pepper, and seasonings including salt, oregano, paprika, and nutmeg, infusing a layered earthy and slightly smoky flavor. Wild rice is added along with beef broth to the skillet, and the mixture is simmered covered for 40 minutes, allowing the rice to absorb liquid and flavors.
Once the rice is nearly cooked, chopped rainbow chard is stirred in and cooked briefly until wilted, adding a mild earthy bitterness and vibrant color contrast to the dish. The result is a hearty, one-pan meal with a satisfying texture of tender beef and chewy rice complemented by greens. It works well as a stand-alone dinner or accompanied by a light salad.
Ingredients
- 1 Tbsp avocado oil
- 1/2 red onion chopped, medium
- 1 lb ground beef grass-fed
- 4 cloves garlic minced
- 1 bell pepper cored and chopped, small red
- 1 tsp salt to taste, sea salt
- 2 tsp oregano dried
- 1/2 tsp paprika ground
- 1/4 tsp nutmeg
- 2/3 cup wild rice
- 1 1/2 cups beef broth or chicken broth
- 1 Rainbow Chard chopped, small bunch
Instructions
- Heat the avocado oil to medium-high in a cast iron skillet. Add the onion and saute, stirring occasionally until softened, about 5 minutes.
- Move onions off to the side and add the hunk of ground beef. Sear the beef for 2 to 3 minutes per side before breaking it up into smaller pieces with a spatula.
- Add the remaining ingredients except for the rainbow chard and bring to a full boil. Reduce the heat, cover the skillet, and cook at a gentle simmer for 40 minutes, or until much of the liquid has absorbed.
- Add the chopped rainbow chard, replace the cover and cook until chard has wilted, about 3 minutes. Stir well and serve!
