Ingredients
- 1 lb chicken breast boneless, skinless, cut into bite sized cubes
- 3 TBS cornstarch (divided 2 TBS and 1 TBS)
- 1 TBS extra virgin olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper freshly ground
- 1 onion diced finely, or shallot
- 2 cloves garlic minced
- ¾ cup chicken broth reduced sodium
- 1 can artichoke hearts drained and chopped
- 1 tsp oregano
- 1 lemon juiced (reserved) and zested
- 6 ounces baby spinach
