  • 3 TBS cornstarch (divided 2 TBS and 1 TBS)
  • 1 TBS extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper freshly ground
  • 1 onion diced finely, or shallot
  • 2 cloves garlic minced
  • ¾ cup chicken broth reduced sodium
  • 1 can artichoke hearts drained and chopped
  • 1 tsp oregano
  • 1 lemon juiced (reserved) and zested
  • 6 ounces baby spinach
