Onion Focaccia Bread

This Onion Focaccia Bread features a soft, dimpled dough topped with sweet caramelized onions and shredded white cheddar cheese. The bread dough is enriched with olive oil and garlic, then allowed to rise before baking. The topping of slowly cooked onions with butter and sugar adds a rich, slightly sweet depth of flavor balanced by the sharpness of the cheese. Its textured surface and savory-sweet balance make it suitable as a side for soups or salads, or simply as a flavorful snack.

Description

Onion Focaccia Bread combines a tender, olive oil-enriched dough with a topping of caramelized yellow onions and white cheddar cheese. After proofing the yeast dough until doubled, the dough is spread into a baking dish coated with an olive oil and garlic mixture. Finger dimples on the surface create pockets for the flavors to meld as it bakes. The onions are slowly softened with butter and a touch of sugar to develop sweetness and depth. Shredded cheddar adds a sharp, creamy contrast, melting over the onions and dough during baking. The slight garlic note in the dough complements the richness of the onions and cheese, yielding a balanced and inviting bread.

This focaccia works well alongside salads, roasted vegetables, or as part of a sandwich. It can also be a satisfying snack served warm or at room temperature. The combination of caramelized onion sweetness and savory cheddar makes it versatile and appealing as a homemade artisan-style bread.

Ingredients

Servings

Bread

  • 1 cup water 110°F-115°F, warm
  • 1 teaspoon active dry yeast
  • 2 tablespoons granulated sugar
  • cup olive oil 71 g
  • 2 teaspoons garlic minced
  • 1 teaspoon kosher salt divided
  • 2 ½ cups all-purpose flour

Topping

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 large onion sliced, yellow
  • 1 teaspoon granulated sugar
  • 1 cup White Cheddar Cheese shredded

Instructions

Bread

  1. In a large bowl, combine yeast, water, and sugar. Stir and let it rest for 5 minutes.
  2. In a small bowl, combine olive oil, garlic, and half the salt.
  3. Pour half the oil mixture into the yeast mixture. Set the remaining oil mixture aside.
  4. Add flour to the oil and yeast mixture and stir to combine.
  5. Add dough to a greased bowl and cover with a tea towel. Let it rest for 1 hour or until the dough has doubled in size. While the bread is rising, prepare the caramelized onion topping.

Topping

  1. In a large skillet over medium heat, add the oil and butter. When hot, add the onions and sugar. Cook until the onions are softened (about 20 minutes).

Assembly

  1. Preheat the oven to 450°F.
  2. Pour the reserved oil mixture into the bottom of a 9x11-inch baking dish. Use a pastry brush to coat the dish.
  3. Add the risen dough to the baking dish and work the dough to the edges. Use your fingers to create dimples in the dough.
  4. Top with the other half of salt, shredded cheese, and caramelized onions.
  5. Bake for 18-20 minutes, or until golden brown and the cheese has melted. Serve warm.
