Description
These Onion Pakodas start by thinly slicing a large red onion and massaging it with salt and chopped cilantro to release moisture. Gram flour, rice flour, green chili, garlic, Kashmiri red chili powder, turmeric, and carom seeds are incorporated along with hot oil to create a thick spiced batter. The mixture is shaped into small patties approximately half an inch thick.
The pakodas are cooked in a preheated air fryer at 350°F with periodic spraying of oil and turning to develop a golden crust and crisp edges while maintaining a soft center. Alternate cooking methods include baking in an oven with oil spray or deep frying in hot oil, each achieving a crispy exterior textured by the gram and rice flour batter and the aromatic spices.
The resulting pakodas offer a balance of spice and crunch served best fresh with green chutney or ketchup. The mixture's moisture and hot oil integration contribute to the tender yet crispy finish after air frying or frying.
Ingredients
- 1 large red onion
- ½ cup cilantro
- ¼ cup gram flour besan
- 1 tablespoon rice flour
- ½ teaspoon green chili minced
- 1 teaspoon garlic grated
- 1 teaspoon Kashmiri red chili powder
- 1 teaspoon carom seeds
- ¼ teaspoon Turmeric ground
- 1 teaspoon kosher salt
- ½ tablespoon neutral cooking oil heated, generic cooking oil

Instructions
- Cut the onion in half and peel the skin and outer thin layer off. Then thinly slice each half of the onion.
- In a medium bowl add onion, cilantro and salt. Massage with your hands or using a silicone spatula to help release the moisture. Add gram flour, rice flour, green chili, garlic, red chili powder, turmeric, and carom seeds. Mix well to form a thick mixture. Add hot oil and give a quick mix.
- Preheat the air fryer to 400 degrees.
- Divide the mix into 9 equal parts and then pick up each part and press down with your fingers to form a small patty (about ½ inch thick and 2-½ inches wide).
- Lightly spray the air fryer basket with cooking spray. Place the Pakodas in the air fryer basket keeping some space between each one for airflow.
- Air fry at 350 F for 10 mins. Open the air fryer and lightly spray oil on top and cook for an additional 2 minutes or until they become golden brown with crispy edges. Enjoy hot with green chutney or ketchup.
Notes
- Oven baking instructions: Bake at 400°F for 15-20 minutes, flipping halfway and spraying with oil for even crispness.
- For traditional texture, deep fry pakodas in hot oil without flattening batter; fry until golden and crisp on edges.
