Onion Ring Chips

Simple low carb snack made with onions, shredded parmesan cheese, and seasonings. Baked until crispy and golden brown. So easy and delicious.

Ingredients

Servings
  • 4 small onion peeled and sliced to 1/4 inch thickness
  • 8 ounces Parmesan Cheese you can use 6-7 ounces, shredded
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • cooking oil spray
  • tzatziki Optional dips: Ranch, or ketchup

Instructions

  1. Preheat the oven to 400F and line a sheet pan with Parchment paper.
  2. Using a Mandolin slicer, slice the 4 small onions thin (1/4 inch thickness)
  3. Spread the 8 ounces shredded Parmesan Cheese over the prepared sheet pan.
  4. Carefully line the sliced onions over the parmesan cheese.
  5. Spray with cooking oil spray and season with the 1 teaspoon smoked paprika, 1 teaspoon onion powder, and 1 teaspoon garlic powder.
  6. Bake for 18-20 minutes or until the cheese turns golden brown.
  7. Allow it to cool for 10 minutes so the cheese hardens up.
  8. Cut them into squares and serve with your favorite dip like Tzatziki.

Notes

  • I find small to medium sized onions work best. 
  • Be careful not to burn the cheese or else it will taste bitter. Oven temperatures vary so start checking it at 16 minutes. 
  • Slice the onions thin or else they will come out soggy. If you don't have a mandolin slicer, just use a sharp knife and slice as thin as possible.
  • If you don't have cooking oil spray, just dab the onions with a bit of olive oil or avocado oil with a brush.
  • You technically only need the onion and parmesan cheese to make this. The seasons just add flavor.
