Description
The soup starts by gently cooking sliced yellow onions in butter until golden and caramelized over about 30 minutes, unlocking their natural sweetness. Ingredients
- 1 tablespoon butter unsalted
- 3 yellow onion large, thinly sliced
- 1 teaspoon kosher salt
- 1 clove garlic minced
- 1/4 teaspoon sugar
- 1/4 teaspoon thyme dried
- 1 bay leaf
- 4 cups beef broth low sodium, or 1 32 oz box
- 2 teaspoons Worcestershire sauce
- 1 cup bread cubes, French or ciabatta
- 1 cup swiss cheese grated
Instructions
- In a saucepan over medium heat, melt the butter.
- Add the onions and salt and cook until onions start to turn golden brown, stirring occasionally, about 30 minutes.
- Add the garlic, sugar, thyme and bay leaf and cook an additional 10 minutes.
- Add the stock and worcestershire sauce and bring to a boil. Reduce heat to low and simmer until the onions are very tender, about 10 minutes.
- Heat the oven to broil. Place the bread cubes on a baking sheet and broil for 3-5 minutes, or until crisp and golden.
- Ladle the soup into oven-proof bowls. Top each bowl of soup with a handful of croutons and a handful of cheese.
- Place under the broiler until the cheese is melted, about 2 minutes.
Notes
- Use yellow onions for their balanced sweetness that caramelizes well over slow cooking.
- Substitute Swiss cheese with Gruyere, Parmesan, or any mild cheese that melts well.
- French Onion Soup can be prepared up to three days in advance, storing broth without bread or cheese refrigerated.
