Description

This recipe combines finely grated Parmesan cheese, mayonnaise, chopped white onion, lump crab meat, and chopped artichokes with parsley and seasonings including salt, white pepper, and smoked paprika. The ingredients are mixed gently to keep the crab in chunks, then baked in a dish until it starts to brown.

Bread slices are toasted under a broiler until lightly browned, then topped with the warm crab mixture, tomato slices, and Monterey Jack or Swiss cheese. Returning the open-faced toasts under the broiler melts the cheese quickly.

The result is a hot, layered dish featuring creamy crab and artichoke topping over crisp toasted bread with tomato and melted cheese. It is served hot and makes a satisfying appetizer or light meal.

Using freshly grated Parmesan is recommended for best texture and flavor. Blue crab meat is preferred, but backfin or claw meat can be substituted.

  • 2 cups Parmesan Cheese , finely grated*
  • 1 1/2 cups mayonnaise
  • 1/2 cup white onion , finely chopped
  • 12 ounces crab meat lump
  • 13 ounces Artichoke drained and finely chopped
  • 1/2 cup flat leaf parsley chopped
  • 1/2 teaspoon salt fine sea salt
  • 1/2 teaspoon white pepper
  • smoked paprika dash
  • 8 lices bread thick cut
  • 2 tomato cut into 16 slices, large
  • 16 lices Monterey jack cheese or Swiss Cheese
  • cooking spray

Instructions

  1. Preheat oven to 400 degrees. Coat a 9x9 baking dish (or similar size) with cooking spray. Set aside.
  2. Combine Parmesan cheese, mayonnaise, chopped onion, lump crab meat, chopped artichokes, parsley, fine sea salt, white pepper and smoked paprika in a medium bowl. Toss to combine being carful to not break apart crab pieces.
  3. Transfer mixture to prepared baking dish. Bake for 25 minutes, or until starting to lightly brown.
  4. Place sourdough bread slices on a rimmed baking sheet. Place under high broil about 4 inches from the heating mechanism for 3-4 minutes or until they brown lightly. Remove.
  5. Evenly spoon hot crab mixture over each slice of bread, 2 slices of tomato and 2 slices of Monterey Jack cheese.
  6. Place back under the broiler until cheese melts, approximately 2 minutes, but watch closely considering that broilers vary greatly.
  7. Serve open face and hot.
