Orange Beef
Description
In this recipe, beef steak is sliced thinly into bite-size pieces for quick cooking. The marinade and sauce combine tamari (or soy sauce) with fresh orange juice and zest for citrus brightness, brown sugar for sweetness, sherry for depth, toasted sesame oil for aroma, minced ginger and garlic for warmth, szechuan peppercorns for slight numbing spice, and optional red pepper flakes for heat. The beef is marinated briefly to absorb these flavors.
Cooking involves stir-frying the beef rapidly in a high-smoke-point oil until lightly browned, then adding sliced carrots and the white parts of the green onions to maintain crunch. The reserved marinade is added and simmered briefly, coating the ingredients in a glossy, flavorful sauce. The green parts of the onions are stirred in last to retain freshness and color. The dish is served over hot noodles or steamed rice, complementing the sweet and zesty beef with soft starch.
Ingredients
- 1 pound beef steak cut into very thin bite-sized pieces, lean, 450mg
- 2 tablespoons neutral-flavored cooking oil (I use avocado oil, high smoke point)
- 2 carrot sliced thinly at a diagonal, large
- 6 green onions , sliced diagonally in 1 inch pieces, **the whites separated from the greens
- For the Marinade/Sauce:
- 1/3 cup tamari or soy sauce
- orange zest of one large naval orange
- orange juice juice of one large naval orange
- 3 tablespoons brown sugar
- brown sugar for low sugar option, or alternative
- 1 tablespoon sherry or dry red wine
- 1 tablespoon sesame oil toasted
- 1 1/2 tablespoons ginger fresh, finely minced
- 2 teaspoons garlic minced
- 1 teaspoon szechuan peppercorn they come whole, just crush them in a ziplock bag or bowl, finely crushed
- 1/2 teaspoon red pepper flakes (optional for heat)
- 1 tablespoon cornstarch
- 16 ounces noodle or serve over steamed rice if preferred, hot, 450mg
Instructions
- Combine all the marinade/sauce ingredients in a medium bowl. Add the beef and stir to combine. Set aside while preparing carrot and green onions.
- Heat the oil in a wok or skillet over high heat. Add beef, reserving the marinade, and fry quickly until lightly browned. Add the carrot and the whites of the green onions and stir fry for a couple of minutes until the carrots are slightly tender but still have some crunch.Add the remaining marinade/sauce and stir to coat. Simmer for 2 minutes. Add the green parts of the green onions and stir to combine.Serve the orange beef over the hot noodles or steamed rice.
