Orange Pomegranate Salad with a Orange Vinaigrette Dressing

A delicious salad made with fresh oranges and pomegranate then topped with feta cheese and an amazing dressing!

Ingredients

Dressing

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons orange juice
  • 1 tablespoon orange zest
  • ¼ teaspoon salt
  • crack of pepper

Salad

  • 4 cups fresh chopped romaine lettuce
  • 3 Sliced oranges
  • 1 large pomegranate
  • ½ cup crumbled Feta cheese
  • ¼ cup sliced almonds
  • sea salt and fresh ground pepper to taste

Instructions

  1. In a small bowl, whisk together the ¼ cup olive oil, 2 tablespoons apple cider vinegar, 2 tablespoons orange juice, 1 tablespoon orange zest, ¼ teaspoon salt, and crack of pepper .
  2. In a large bowl, add the 4 cups fresh chopped romaine lettuce, 3 sliced oranges, 1 large pomegranate, ½ cup crumbled feta cheese, and ¼ cup sliced almonds . Toss with the dressing until coated. Add sea salt and fresh ground pepper to taste.
