  • 6 ounces spring greens
  • 1 cup sliced almonds
  • 2 chopped apples of choice
  • ½ cup crumbled Feta cheese
  • ¾ cup pomegranate seeds

Creamy Lemon Poppyseed Dressing

  • cup mayonnaise
  • ¼ cup milk
  • 3 tablespoons granulated sugar
  • 4 teaspoons cider vinegar
  • 1 tablespoon lemon juice
  • 2 teaspoons poppyseeds

Instructions

  1. In a large bowl, combine 6 ounces spring greens, 1 cup sliced almonds, 2 chopped apples of choice, ½ cup crumbled feta cheese, and ¾ cup pomegranate seeds.
  2. In a small bowl, whisk together ⅓ cup mayonnaise, ¼ cup milk, 3 tablespoons granulated sugar, 4 teaspoons cider vinegar, 1 tablespoon lemon juice, and 2 teaspoons poppyseeds.
  3. Pour over the salad and toss to coat. Serve immediately and garnish with more feta cheese, if desired.
