Orecchiette Pasta with Chicken Sausage and Broccoli

Orecchiette Pasta with Chicken Sausage and Broccoli combines tender pasta and fresh broccoli with browned Italian chicken sausage in a garlicky olive oil sauce. Finished with Pecorino Romano cheese, this dish features a balance of savory sausage, crisp-tender broccoli, and creamy cheese, making a hearty and flavorful pasta suitable for a main meal.

Description

This recipe starts by browning chicken sausage in a skillet to develop savory flavors and a browned texture. Meanwhile, orecchiette pasta and broccoli florets cook together in boiling salted water until al dente, allowing the broccoli to retain some bite. Reserved pasta water is set aside to adjust the sauce consistency later.

Garlic is sautéed in olive oil in the now-empty pot, creating a fragrant base before pasta and sausage return to the pot. The dish is finished by stirring in the grated Pecorino Romano cheese and seasoning with kosher salt and black pepper. Some pasta water is added to achieve a light, smooth sauce that coats the pasta and broccoli, while larger broccoli pieces can be broken up for better integration.

Served hot, this pasta is satisfying with additional cheese offered at the table. It yields about 9 1/2 cups, making it suitable for family meals or small gatherings.
