Oreo Ice Box Cake

Oreo Ice Box Cake layers Oreos and whipped cream in a springform pan, chilled until the cookies soften and meld with the cream. The whipped cream is made fresh by whipping heavy cream and powdered sugar to light fluffiness, creating a smooth, sweet base for the cookies. Chilled for several hours, the cake forms a soft, creamy dessert that highlights the contrast between rich cream and chocolate cookie.

Description

The Oreo Ice Box Cake recipe involves alternating layers of whipped cream and Oreo cookies in a 9-inch springform pan. The heavy cream is whipped with powdered sugar until fluffy but not overbeaten to avoid turning into butter. Layering continues until the pan is filled, then the cake is covered and refrigerated for at least four hours to soften the cookies into a cake-like texture. This softening process is essential for achieving the right balance of creaminess and cookie texture.

When ready to serve, the cake can be frozen to hold for longer storage but should still be thawed and rested in the refrigerator for the softening step before serving. The dessert offers a chilled, creamy sweetness with the familiar chocolate crunch of Oreos absorbed into the whipped cream layers.

Ingredients

Servings
  • 3 cups heavy cream
  • 1/3 cup powdered sugar
  • 46 Oreo cookies

Instructions

  1. In a stand mixer, add the heavy cream and powdered sugar together on low speed until the sugar is mixed in.
  2. Increase the speed to high for 1-2 minutes until the whipped cream is light and fluffy but do not let it go too long or you will make sweetened butter.
  3. In a 9" springform pan layer whipped cream and Oreos until you reach the top of the pan.
  4. Cover the pan with plastic wrap gently and refrigerate for 4 hours.
  5. If not serving right away freeze until you are serving (thaw before you serve, but remember the 4 hours in the refrigerator is needed for softening the cookies, so don't skip that step.)
