Our best No Mayo Coleslaw offers a lighter alternative to creamy slaws by using a tangy dressing that incorporates garlic, apple cider vinegar, olive oil, and Dijon mustard. The slaw mix includes shredded green cabbage for crunch, fennel for a subtle anise flavor, sliced apple adding sweetness and texture, complemented with fresh dill and caraway seeds to add herbaceous and aromatic notes. Tossing and resting the ingredients for at least one hour softens the cabbage and allows the flavors to blend well.
The slaw carries a delicate balance of sweet, sour, and savory elements without mayonnaise, making it a versatile accompaniment to a variety of meals. The apple cider vinegar used in the dressing reduces browning of the apple slices, keeping the salad visually appealing for days. It keeps well refrigerated for 3 to 4 days and is best served close to room temperature.
The dressing’s sugar and salt levels are balanced to favor a slightly sweet taste similar to coleslaw, and vinegar amount can be adjusted based on personal taste and vinegar acidity. The addition of caraway seeds enhances the fennel and dill flavors without overpowering the salad.
Ingredients
Coleslaw:
- 1/4 green cabbage shredded (~12 cups, Note 1, large head or 1/2 small head
- 1 fennel bulb trimmed, halved and shaved at 1.5 mm on a mandolin (Note 2, medium
- 1 red apple (any kind is fine), halved and thinly sliced (1.5 mm thick)
- 1 cup dill leaves about 1 whole bunch, roughly chopped
- 2 tsp caraway seeds (Note 4)
Dressing:
- 2 garlic minced, small clove
- 3 tbsp apple cider vinegar , or less to taste (Note 6)
- 5 tbsp olive oil
- 2 tsp Dijon mustard
- 1 1/2 tsp caster sugar (Note 5)
- 1/2 tsp salt (Note 5)
- 1/8 tsp black pepper
Instructions
- Dressing: Shake Dressing ingredients in a jar.
- Toss! Place cabbage, fennel, apple and dill in a very large bowl. Pour over Dressing, toss well.
- Sprinkle with caraway seeds then toss again.
- Set aside for at least 1 hour to allow cabbage to wilt. Give it a good toss, then transfer to serving bowl and serve!
- Storage: Keeps perfecty for 3 to 4 days in the fridge. Dressing stops apple from going brown. Best to bring to room temperature before serving.
Notes
- Use about 12 cups packed shredded green cabbage, after removing the thick core for best texture.
- Shave fennel about 1.5 mm thick to match the crispness of cabbage and apple slices.
- Adjust vinegar amount based on acidity and personal taste; apple cider vinegar contributes mild acidity and complements the apple.
- Caraway seeds should be used sparingly to add subtle aniseed flavor without overwhelming the dish.
- Store coleslaw in the fridge for up to 4 days; bring to room temperature before serving for best flavor.
