  • 1 ½ cups jasmine rice rinsed, dry
  • 24 ounces chicken stock
  • salt kosher salt
  • black pepper kosher salt
  • 6 ounces White Cheddar Cheese freshly grated, sharp
  • 4 tablespoons unsalted butter thinly sliced

Instructions

  1. Preheat the oven to 425 degrees F. Spray a 9x9 inch baking dish (or a comparable size) with nonstick spray.
  2. Rinse the rice in a strainer until the water runs clear. Place the rice in the baking dish. Pour in the stock. Add a pinch of salt and pepper. Sprinkle the cheese in and give it a quick stir.
  3. Add the butter slices all over the top of the rice. Cover the dish tightly with foil.
  4. Bake for 30 minutes. After 30 minutes, remove the foil. Bake for 20 to 30 minutes more, until the rice is fluffy and the top is slightly golden.
  5. Serve!
